Robby has about 30 toy cars and plays with each one of them at least once a day... its definitely his favorite thing to do. Bradley doesn't totally love the whole sitting upright stuff (bumbo or being propped up) In other news, he will be starting baby cereal soon!! Why is time going by so fast?!

how things are around here

It's nearly midnight and Robert is at work and I find myself not being able to sleep, maybe it was that cup of coffee I had at 5 or just the fact that till Bradley wakes to nurse I'm stuck between two rooms. We are "co-sleepers" in this house, no one sleeps alone. Robby has this amazing talent of knowing if he's alone in a room when sleeping, really is pretty crazy. I have been wanting to post an update on how everyone is doing since its been a while. 

Bradley is amazing, he's growing so fast and is such a smart, happy and pleasant baby. My favorite part about him being s baby is breastfeeding. I forgot how much I love nursing, I stopped when Robby was about one year old so it was almost a year that I had not been. Besides the amazing things it does for baby and mom, the comfort and bonding time with your child is like nothing else. I know for many reasons people aren't able to, but for those that are debating it.... Stick with it and nurse as long as you can, you will not regret it.  Any-who, he is nearly four months now and is in 6-9m clothes! I think he's officially bigger than what his brother was at that age!

Bradley had a little pink eye that was cleared up in 3 days with my breast milk!!


Robby is really starting to change as well. He has been in speech therapy for a month now, although he isn't improving by a lot just yet. I see so much growth in him still. He is a sweetheart and I can see such joy in his eyes. He shows his little brother more attention and affection now a days. I can picture them in a year from now and what buddies they will be! 

Now me, myself, and I ..... Things for me don't seem to change much anymore, trying to go to the gym as much as I can and getting enough time to myself to keep my sanity! Really looking into making cards again, I just loved it and think I need to have a hobby again.... I mean one besides kids and house work!! Hahaha

I kind of gave up on doing these, or maybe just got to busy.... but since my return to the world of Facebook, I have an urge to do these again.

This one or should I say two this time, are from when Robert and I first started dating(2009), back when we could randomly decide to go to a park and take pictures. I think I will start referring to these days as my skinny days..... We had a lot of fun this day.

Roasted Cauliflower Alfredo with Peas

So this recipe is actually amazing, and it's healthier than a regular Alfredo with pasta that's for sure!! I was able to whip it up the other day while Robby was napping and Bradley watched me from his baby swing in the kitchen. It takes about 35 minutes to make, which isn't to bad at all.

Ingredients

  • 1 large head of cauliflower - 3 lbs. (or 2 1/2 lbs. pre-cut florets)
  •  1 Tbsp Olive Oil
  • 1 cup frozen peas
  • 1 tbsp butter
  • 1 tbsp cornstarch
  • 1 cup milk
  • 1/2 cup Parmesan cheese
  • 1/2 cup nonfat Greek yogurt
  • Salt and black pepper to taste
 First, you make sure the rack is in the middle of your oven and preheat it to 425 degrees. You then pull off all of the leaves and cut off the lower part of stem on the cauliflower. Cut the cauliflower into quarters, then cut each quarter into 6-7 pieces.  Make sure to give them a good rinse.


 Making sure you have clean hands, lay them out on 1-2 baking sheets evenly. Drizzle them with 1 tbsp of olive oil, toss them to coat. Place the baking sheets into preheated oven and let roast for 10 minutes.


While the cauliflower is cooking, pre-measure the remaining ingredients and have them ready to go near stove.


Remove baking sheets from oven and turn florets, making sure the flat surfaces are against sheet. You will get the best caramelization this way. Cook cauliflower 10-20 minutes longer or till tender. They will pierce easily with fork when ready.

While they continue to roast, cook frozen peas and start Greek Yogurt Alfredo sauce.

Melt butter in a saucepan over medium heat. Whisk in cornstarch or potato starch to form a thick paste. Add the milk slowly, 1/4 cup at a time, whisking constantly to keep the sauce smooth. Once the full cup of milk has been added, heat till the mixture thickens and becomes bubbly around the edges. Do not let the milk come to a full boil.


  Pour in the Parmesan and whisk it to melt into the sauce. Turn the heat to low. Whisk in the Greek yogurt till smooth and heated through. Remove from heat and season with salt and pepper as needed.


you can now place the roasted cauliflower and cooked, drained peas into a large mixing bowl and toss to combine.


Serve each portion with the amount of warm Greek yogurt Alfredo sauce you want, this sauce will thicken as it stands.

 
It really is a delicious healthy alternative to pasta and Alfredo sauce!!!

Moving Forward, Looking Back

Some of you may have noticed that the blog got a new look recently, I thought since it was the new year and the other look was a little outdated it was time for a change. While changing things on the website it gave me a chance to look back at old old posts like THIS ONE and THIS ONE. I realized this blog has become less about doing and creating things, and more about my life. I don't think it is a bad thing, but I want to try a little harder to bring you guys some projects. So keep an eye out for some totally awesome mom crafts coming your way!!
